Sumile understands itself as an Asian-Western fusion restaurant, which uses finest Asian ingredients (some of which are flown in daily from Tokyo) and presents them in a new way. New York ist dafür bekannt, dass es immer wieder neue und originelle Restaurants hervorbringt. So auch Sumile. Sumile versteht sich als japanisch-westliches Fusion Restaurant, welches feinste asiatische Produkte (zum Teil täglich aus Tokio eingeflogen) neu präsentiert.
Der erste Eindruck ist sehr positiv. Zwar ist das schmale Restaurant an dem Abend nicht voll besetzt, doch das kühle moderne Design (helle Wände, modernes Gedeck), das aber zugleich auch mit warmen asiatischen Elementen bestückt ist (Kerzen, dunkles Holz, Sitzbänke aus Rattan mit vielen Kissen), überzeugt voll, da man sofort in eine neue geborgene Atmosphäre versetzt wird.
