Für Aufsehen sorgte Dirk Maus erstmals, als er vor einigen Jahren für sein Restaurant im Staatstheather Mainz einen Michelin-Stern erkocht hat. Kurz danach schon verließ er diese Location, um ein Restaurant in Essenheim zu beziehen.
